Serve with 2 small tortillas and 1 tbsp prepared Guacamole.
1 pkg Huevos Rancheros Seasoning
1 can (14 oz/398 ml) crushed tomatoes
1 can (19 oz/540 ml) black beans, drained and rinsed
1 cup water
1 cup grated cheese
Topping suggestions (optional): Prepared Guacamole Dip or sliced avocado, prepared Poco Picante Salsa, lime wedges, chopped green onions, cilantro
- In a fry pan set over medium-high heat, combine seasoning with tomatoes, black beans, and water.
- Bring to a boil over high heat, stirring often. Reduce heat to medium-low; cover and simmer for 5–8 min.
- Make a small indentation in sauce for each egg; crack in 6 eggs. Cover and simmer for 8–10 more min or until eggs are set. Add cheese for the last 2 min of cooking.
- Serve with toppings, as desired.
