You’ll be a hero when you make these moist cookies. They are gluten free, vegan, and dairy free!


Ingredients

large bananas
1 12 cups
unsweetened shredded coconut
1 tbsp
mini chocolate chips

Preparation
  1. Preheat oven to 350° F (175° C).
  2. Use a food processor or a blender to combine all ingredients.
  3. Drop dough by heaping teaspoonful 3” apart onto on a Sheet Pan lined with a Sheet Pan Liner. Lightly flatten cookies with the palm of your hand.
  4. Bake for 10–12 minutes, or until lightly browned at edges.
Tips

These can also be made a day or two ahead, and kept in the fridge. Reheat gently under the broiler or in the microwave.
